Tasting Note
The apples we use to obtain ice cider come from a late harvest, in order to use the fruit at its maximum ripeness. Ice cider is made in 3 steps. First, the juice is frozen, then it is melted, Finaly, the extremely concentrated and sweet liquid that melts first, is separated from the rest and then fermented by cryo-concentration, in order to obtain a sweet nectar.
This cider is a blend of five varieties of apples, most not most noting McIntosh, Cortland, Empire, Russet and Spartan. To the eye, it presents a beautiful caramel-colored dress. One can also guess the sweetness of the product, by its creaminess. On the nose, there are fruity, woody, pure and deep aromas. By letting it age a few months in the bottle, slightly more complex aromas of pineapple, caramel, apricot and vanilla will develop. In the mouth, our ice cider has a pleasant acidity that balances the sugar of the apple, which has been concentrated by the cold.
La Palette, is in the honour of Stéphane Petit, cider master and current owner and here is the story that is told:
We can say that Stéphane Petit, our cider master, is not afraid. After a night of freezing rain, the orchard had turned into a huge ice rink. Despite the polar cold, he organized the longest friendly hockey game in history. We never knew his secret to resist the cold but in our opinion, it's drinkable!
