Tasting Note
The apples we use to make ice cider are harvested late to ensure the fruit reaches its maximum maturity. The ice cider is made through cryo-concentration, which is broken down into 3 steps. First, the apple juice is frozen to concentrate its flavour. Then, it is thawed to collect the first liquid, which is extremely concentrated and sweet. Finally, it is fermented to create a liqueur-like nectar.
This cider is made from a blend of five apple varieties: McIntosh, Cortland, Empire, Russet, and Spartan. Visually, it has a beautiful caramel-colored hue. The liqueur-like texture of the product is also evident from its smoothness. On the nose, there are aromas of apple pie. On the palate, more complex flavors of pineapple, caramel, apricot, and vanilla delicately emerge. The ice cider offers a pleasant acidity that perfectly balances the natural sweetness of the apple. A perfect digestif that will complement your aged cheeses, foie gras, and fine chocolates.

We can say that Stéphane Petit, our cider master, is not afraid. After a night of freezing rain, the orchard had turned into a huge ice rink. Despite the polar cold, he organized the longest friendly hockey game in history. We never knew his secret to resist the cold but in our opinion, it's drinkable!
