Melba
Melba is a medium size apple, its skin is thick and its color is a pale yellow washed with red. This apple variety is very fragile. It is also a perfect apple for dessert, cooking and juice. Melba comes from rustic tree, sturdy and perfect for our climate. These apple trees begin to produce early in the month of August. One of the best summer apples! Its storage time is about 2 weeks at 2°C.

Lobo
Lobo is a big round and irregular apple. Its skin is yellowish green and has red stripes. Despite its thin peel, it is resistant to cold. As its sister Melba, its skin is slightly thick and leathery. Many have questions about the best way to pick an apple. Indeed, there are many choices: pull up, pull down, lift up, turn around... But what is the best way? The best technique is to hold the apple in your hand and gently turn it upwards. You'll see, it will come off easily! In addition, you will protect the flower bud and this technique will ensure a beautiful flowering next year.

Preservation of apples
For better preservation, our grandmother recommends that apples should always be handled with care to prevent them from turning brown. Then store them in a damp cloth in your refrigerator drawer. It's a simple trick and your apples will stay firmer longer! Did you know that apples can even be frozen in quarters or slices but never whole? Place them in a bag and remove as much air as possible for a better result.
The orchard in the mountains
Mount Saint-Hilaire is one of the highest hills in the Montérégie region. Its altitude is 414.2 meters (or 1358 feet). It is surrounded largely by the scenic path of the mountain, a road lined with many hundred-year-old houses.
This mountain has many names. At first, it was called Chambly, like the river of the same name. The successive lords of Rouville tried to give it their names, but when the parish of Saint-Mathieu-de-Beloeil was founded, it was gladly given the name Beloeil, which seemed predestined to him. However, when Saint-Hilaire became the town of Saint-Hilaire, the mountain officially became Mount Saint-Hilaire.
Several legends originated in this mountain rich in history. It has had memorable times. In 1841, a hundred-foot-tall cross was erected on its summit, with access to the interior. This allowed the more daring, who wanted to climb up to the ridge, to look out the windows. Its construction lasted five years; a hurricane battered it and The Chapel, which served as his base, resisted until 1877.
