Tasting Note
The apples we use to make the fire cider are harvested late to ensure the fruit reaches its maximum maturity. The fire cider, as its name suggests, is made using heat. The apple juice is first boiled to evaporate the water and concentrate its flavor. After fermentation, a wonderfully sweet nectar is harvested! Visually, it has a beautiful caramel-colored hue. The liqueur-like texture of the product is also evident from its smoothness. On the nose, there are aromas of caramelized apples and spices. On the palate, a lively and delicious acidity gives it a finish worthy of a dessert! A perfect digestif to enjoy by the fireside with dark chocolate or aged cheeses.
The Jaseux, is to the honor of our father Petit and here is the story that is told:
Burning with an extraordinary passion, our father could spend hours chatting, with his red cheekbones red and energic talk. He is said to have almost set fire to the orchard on a hot summer day when he was so astonished at the beauty of the orchard that he dropped his pipe at his feet.
