Soup of the orchard
Ingredients:
1 butternut squash into pieces
1 apple into pieces
2 cloves garlic
1 leek
1 chopped onion
300 ml Cidre tranquille
400ml chicken stock salt + pepper branches of Lovage (optional)
2 c . butter 50 ml cream 35%
preparation: Sauté the leeks , onion and garlic until tender. Add the squash , apples and cider , simmer 3 to 4 minutes . Stir in chicken broth and cover with water , simmer 30 to 40 minutes. After cooking , go to the blender and season with salt, pepper and minced Lovage cream .
